I'm going to let you in on one of my best Dutch oven recipes. The pineapple
upside-down cake is a great dessert to make in your conventional oven
or in a pit outside.
Ingredients:18-inch heavy-duty aluminum foil1 (16-ounce) can pineapple slices 2 tablespoons butter or margarine 1 (8-ounce) jar maraschino cherries ½ cup packed brown sugar 1 (18-1/2-ouce) package yellow cake mix, prepared according to package directions 30 minutes. $9.95 US / $15.95 Canada

I don't love anything quite like I love to cook Dutch oven. Dutch oven
cooking is one of the oldest and most popular types of outdoor cooking.
A Dutch oven is probably the most versatile piece of cooking equipment
available.
Line a 12-inch Dutch oven with foil. Drain pineapple, reserving juice.
Place butter or margarine in the Dutch oven and place over low heat to
melt. When butter is melted, arrange pineapple slices on top of foil and
place a maraschino cherry in the center of each pineapple slice. Sprinkle
brown sugar and 3 tablespoons of reserved juice over fruit. Pour prepared
cake mix over the fruit. Put cover on Dutch oven. Bake with medium coals
on top and bottom for 25 to 30 minutes or until a toothpick inserted in
the center of the cake comes out clean. Cool 8 minutes in pan, away from
heat, then invert the cake onto a platter. Carefully peel away the foil,
and enjoy. Serves 6 to 8.
